At the end of October, the Year 11 Hospitality class visited the Noosa RACV resort. The excursion aimed to provide students with an overview of all areas in the hospitality industry. On arrival, RACV’s Human Resource Manager, Kellie, greeted students and gave an informative tour of the resort. She even discussed future employment opportunities and provided the students with some interview tips. We were then taken on a behind the scenes tour of the brand new kitchen facilities with Brad the Chef de Partie. We saw an array of commercial equipment, watched chefs performing daily tasks and visited multiple cool rooms and food storage areas. We visited the cold rooms where all desserts and pastries are prepared and sampled some delicious chocolate truffles made by the head pastry chef.

Students were then treated to a demonstration from Ben the Sous Chef. In class, students are currently learning to make canapés for the upcoming Year 12 Graduation Ceremony. To tie in with our learning, Ben showed students how to make his signature dish, crispy crab cake sliders. Multiple elements were used to create these sliders including pickled carrot, mayonnaise, rocket and a brioche bun. They were packed full of flavour! Next, we entered the resort restaurant where we enjoyed lunch together, ordering tasty meals such as fresh snapper and crisps, beetroot ravioli and pulled lamb tortillas. Overall, the experience was enlightening, providing students with a great overview of the hospitality industry. Thank you to RACV Noosa who gave us to the opportunity to be involved in such an enjoyable experience.
